2006 Adagio, Napa Valley Proprietary Blend Red Wine
2006 Adagio, Napa Valley Proprietary Blend Red Wine
48% Cabernet Sauvignon, 31% Merlot, 16% Cabernet Franc and 5% Petit Verdot.
ADAGIO: a musical term meaning a slow and graceful tempo. The grapes for this wine come primarily from our Lake Cynthia Vineyard on the Silverado Bench in the southern part of the Napa Valley. They were hand picked between September 24, 2006 (Merlot) and October 25, 2006 (Cabernet Sauvignon) and fermented in a small lots with extended maceration. Total "time on the skins" was a lengthy 40 days to achieve maximum extraction, flavor and color stability. Following fermentation, the wine was aged in a combination of French and American oak barrels (50% new - 50% once used) for approximately twenty-nine months prior to blending. It was aged an additional 7 months in the bottle prior to release. This quintessential Napa Valley "Bordeaux Blend" is blended from our very best barrels. It has great depth of color, with explosive wild berry flavors with notes of chocolate, spice and herbs. It will age well for years and be an exceptional compliment to any meal.

2007 Vivacé - Ermitage Blanc
2007 Russian River Valley Ermitage Blanc, White Wine
63% Marsanne, 31% Roussanne, 6% Chardonnay
Vivacé: - A musical term meaning “lively, brisk, quick and bright.” This Ermitage Blanc takes its inspiration from the great white wines of the Northern Rhone Valley in France. The grapes for this cool-climate white wine were picked in California’s Russian River Valley on October 16, 2007. We obtained the “secret” to making this wine while visiting with a great wine maker in the south of France. With an equal blend of Marsanne and Roussanne plus a generous dollop of Chardonnay, this wine was fermented and aged sur lees in 100% French oak (33% new) for more than a year. Once bottled, it was aged an additional three months prior to release to permit the flavors to fully marry. This is not your typical fat and buttery Chardonnay, nor a flowery Sauvignon Blanc. It is a very complex combination of flavors imparting layers of butterscotch, apples, honeysuckle and pears with spicy notes of nutmeg and cinnamon. It has an excellent balance and a long finish. One taster characterized it as a “new world front pallet with an old world finish. Serve blind to challenge your most discriminating guests.
2008 Scherzo - Rosé of Cabernet
Scherzo: a musical term meaning "a lively composition with many surprises". Surprise indeed! Scherzo is a fully fermented, ultra dry Rose’ of Cabernet, with no residual sugar! “An exceptional blend of light fruity black cherry, strawberry and raspberry flavors together with a hint of black current that Cabernets are know for, combine with soft, supple tannins and crisp, balanced acidity to provide a unique Rose with clear structure. It is rare to find such a combination of fruit, spice and depth of color in a Rose'. This is a wonderful year-round Rose’ for sipping or for serving with lighter foods. It, like the 2006 and 2007 vintages, raises the bar for all American Rose’ wines. Said one reviewer, "Unlike many Rose's which are the by-product of a vintner's efforts to drain off juice in order to concentrate other wine, Kitchak Cellars picks these grapes and makes this wine with the sole purpose of making an exceptional Rose'. 2007 Scherzo - Rosé of Cabernet
100% Estate Grown Napa Valley Cabernet Sauvignon
Scherzo: is a musical term meaning “a lively composition with many surprises.” Scherzo is a fully fermented, ultra dry Rose wine. The Cabernet Sauvignon grapes for this wine were hand picked from our Lake Cynthia Vineyard east of the Silverado Trail, just north of the Town of Napa, on October 3, 2007. “Cold soaked” in contact with the skins for only 36 hours, this wine is even richer in color than our acclaimed 2006 Scherzo. All of the juice for this wine was free run. Fermented at cool temperatures in French oak barrels, it was aged sur lees for six months prior to bottling. It is rare to find such fruit, spice and depth of color in a Rosé. With cherry and white strawberry flavors dominating, the soft, supple tannins and crisp, balanced acidity provide an impressive structure. The 2007 Scherzo is a wonderful year-round Rosé for serving with lighter foods such as turkey, pork or fish.
